I had a boss at a coffee house who did that everywhere. He used quotation marks for emphasis, I think.
LET FALLING KNIVES "FALL"
That sort of thing. One time he asked me to add an item to the menu, so I embellished it in his style:
FRESH "SQUEEZED" ORANGE JUICE
Two years later, and it's "still" like that.
